We are based in Bangor Co. Down and last year we moved to our current premises in North Down Business Advice Centre. (Formerly Enterprise House)
A necessary move as we previously had converted our garage into a small bakery, where we worked for ten happy years, until the 225 sq.ft. could no longer accommodate us.
We now have an amazing 1000 sg.ft. of space, divided into a showroom, consultation and last but most important the kitchen area.
There are seven people working with us contributing their various talents, I will introduce you to them over the coming weeks.
First of all we bake the cakes, using only the best of ingredients.
Clare (my daughter) is our baker. Clare also takes most of the “cake consultations” with prospective clients about the design of their cake. She organises these on Monday or Tuesday evenings and on Saturday mornings.
Next the cakes have to be prepared. This is usually done by Jen (the another Jennifer @ Jennys cakes).
Jen takes the cakes when they have cooled down and gets them ready for decoration. This involves filling and leveling the cakes. We do actually use a spirit level for this. The leveling is especially important for wedding cakes which are usually stacked or on pillars. Jen also assists me with the chocolate wedding cakes etc.
Next we have Amy who decorates the cakes, she is the one who does most of the novelty work.
All the modelling done is bespoke and the figures are created to match photographs or descriptions. The range of different cakes that can be modelled is vast, anything from your favorite football teams shirt to the Kremlin wall.
Then there’s myself, I mostly decorate the formal wedding cakes as well as the chocolate cakes.

A lot of the wedding cakes are decorated with sugarcraft flowers that match the flowers bouquet. These are made by Margaret. Each individual petal is made separately out of sugar-paste.
